Spiced Pecans

Ingredients:
2 cups pecan halves (I like to pick through them and use the broken ones. Save the unbroken ones for Pecan Pie!) 1 egg white 1/2 cup granulated sugar 1 Tbsp. ground cinnamon A non-humid day
Directions:
Preheat your oven to 300 degrees. Place pecan halves in a medium bowl. Whisk the egg white until a bit frothy, then add to the pecans. Stir until the pecans are all moistened. Sprinkle sugar and cinnamon over the pecans, then stir until coated well. Spread evenly onto an ungreased jelly roll pan. Bake at 300 degrees for 20 minutes. Cool and separate the pecans. Store in an airtight container at room temperature. Makes about 2 cups. Enjoy!! -Diana
