Fish in Indian-Style Tomato Sauce


Ingredients:
1 Tbsp canola or veg. oil 1 c finely chopped onion 1 clove garlic, peeled, minced 1 chili pepper, seeded, minced 1 Tbsp grated gingerroot 1/2 c veg broth 1/2 tsp ground cumin 1 can diced tomatoes in puree 1 Tbsp minced cilantro 1 1/3 lb white fish fillets, cut into serving pieces freshly ground black pepper to taste 1 Tbsp lime juice
Directions:
In large skillet, heat oil over medium heat. Add onion, garlic, chili. Saute 5 min. Add ginger and a few Tbsp of broth; cook 5 min. Stir in remaining broth, cumin, tomatoes, cilantro. Simmer 5 min, stirring. Add fish and season with pepper and lime juice. Cover, simmer until fish flakes with a fork. Remove fish. Bring sauce to boil; cook, stirring to thicken. Spoon sauce over fish, serve.
