Garnish:
1/2 c tomatoes, chopped
1/4 c minced onion
1/3 c minced cilantro
1 Tbsp key lime juice
Sauce:
1/4 med, v. ripe avocado, diced
1 tsp key lime juice
1/4 tsp salt
1/4 c heavy cream
Scallops
1/2 lb large sea scallops
1 Tbsp olive oil
1/2 tsp salt
1/2 tsp cayenne pepper or chili pdr
1/2 tsp flour
Directions:
Gently toss garnish ingredients in small bowl. Reserve. To make sauce, place avocado, lime juice, salt in food processor, bowl, process until smooth. Gradually add cream, continue to process to make thin sauce. Refrigerate. Rinse, drain, dry scallops. Heat oil. Mix salt, cayenne, flour, dust scallops with mixture. Sear scallops at high heat, cook ?2 min/side. Coat 2 plates with avocado sauce. Arrange scallops on sauce, spoon a scant teaspoon of garnish on top of each scallop. 2 servings.
