Japanese Salad recipes
1 lb soba noodles
peanut oil
2 lb large shrimp, peeled, deveined
1 bunch scallions, in pieces
1/2 tsp garlic powder
4 c mixed greens
1/2 c Thai vinaigrette
1 med carrot, grated
1 med daikon radish, grated
4 oranges, sectioned
1 tsp toasted sesame seeds
1 bunch chives, cut into pieces
Directions:
Cook soba according to package directions, toss with a little oil and chill.
Toss shrimp with peanut oil; broil until firm.
Toss scallions with peanut oil and garlic and broil 10 seconds.
Toss greens with 1 Tbsp of Thai vinaigrette, place on plates.
Mix chilled noodles, carrot, daikon radish, orange sections, sesame seeds and remaining Thai vinaigrette with the warm shrimp and scallions.
Place in the center of the greens, sprinkle with chives.
