Pan-Grilled Quesadilla More Recipes Like This


Ingredients: Metric Units
3 med cloves garlic, crushed
2 Tbsp diced red onion
1 can pimento, drained
1 c canned cannellini beans, rinsed, drained
several drops hot pepper sauce
salt, freshly grd pepper to taste
6 flour tortillas
2 oz low-fat ham, diced
2 oz Monterey Jack cheese, grated
1/4 c chopped fresh cilantro
Directions:
Combine garlic, onion, pimento, beans, in food processor, puree. Season with pepper sauce, salt, pepper. Make quesadillas by spreading three tortillas with bean mixture. Sprinkle ham cheese and cilantro on top. Cover each prepared tortilla with one of the three remaining tortillas. Heat nonstick pan over medium heat, add quesadillas. Heat one minute, turn. Heat another minute, remove to cutting board. Cut each into 4 wedges. Serve with salsa or salad.
