Tomatillo Avocado Salsa More Recipes Like This


Ingredients: Metric Units
1/2 lb tomatillos, husked, rinsed
1 Tbsp chopped onion
1 serrano pepper, minced
1/2 c loosely packed cilantro, chopped
2 cloves garlic, chopped
2 ripe avocadoes, halved, pitted
juice of 1 lime
1/2 tsp salt
Directions:
Cook tomatillos in boiling water 2 min. Drain, rinse under cold water. Put in food processor, add onion, serrano pepper, garlic, cilantro. Puree to coarse consistency. Mash avocadoes in a bowl, leaving some texture. Add tomatillo mix, lime juice, salt. Mix well. Cover, refrigerate 1 hr. Serve cold.
