Banana Nut Bread

3 ripe bananas, well mashed
2 eggs, well beaten
2 c. flour
3/4 c. sugar
1 tsp. salt
1 tsp. baking soda
1/2 c. coarsely chopped walnuts
A warm treat to redeem ripe bananas. A big hit with the guys!
Preheat oven to 350°F. Grease a loaf pan.
Mix bananas, eggs in large bowl. In a medium bowl, sift together flour, sugar, salt, baking soda. Gradually add dry ingredients to banana-egg mixture. Add nuts and blend.
Pour batter into prepared pan. Bake at 350° for 1 hour.
Remove from pan to a rack. Serve still warm, or cooled, as you like it.
