1 c bread crumbs
1/2 c milk
1 Tbsp curry powder
1/4 c cider vinegar
2 Tbsp brown sugar
1/2 tsp turmeric
4 eggs
3 med onions, chopped
2 cloves garlic, chopped
1 Tbsp olive oil
2 1/2 lb ground beef
salt, pepper to taste
1/2 c raisins
1/3 c slivered almonds
2 Tbsp
chutney
4 Bay leaves
Directions:
Mix bread crumbs, milk, curry powder, vinegar, sugar, turmeric, and 2 eggs, beaten. Set aside.
Saute onion, garlic in oil until soft. Add meat, brown. Add salt, pepper, raisins, almonds, chutney, breadcrumb-curry mixture, blend.
Grease large casserole, transfer meat to it.
Beat remaining 2 eggs, pour over meat. Insert bay leaves at random (remove before serving). Place casserole into another pan half-filled with water (or place it right on oven rack). Bake uncovered in a preheated oven at 350°F for about 1 hour. Serve with yellow rice.
