1 c. flour
3/4 c. corn meal
1/3 c. sugar
3 tsp. baking powder
1/2 tsp. salt
1 c. milk
1/4 c. vegetable oil
1 beaten egg
Preheat oven to 425°F. Grease an 8x8
square baking pan
. Mix corn meal, flour, sugar, baking powder, salt.
Add milk, egg, and oil. Blend well.
Spoon into pan, bake about 20 minutes. Cut into squares.
note: 1/4 c = 4 Tbsp.
A cakey, rich cornbread.
