Greek Beef & Potato Stew on Pasta More Recipes Like This

Greek Dinner Recipes

Ingredients: Metric Units
1 lb. (0.5 kg) beef cubes
1/4 c (59 ml) flour
1 tsp (5 ml) salt
pepper to taste
2 Tbsp (30 ml) veg. oil
2 lg. sweet onions
2 lg cloves garlic
1 tsp (5 ml) dried rosemary
2 sprigs parsley
3 bay leaves
1 tsp (5 ml) grd cinnamon
1/4 tsp (1 ml) pepper
1/4 tsp (1 ml) allspice
2 c (0.5 L) water
1 1/4 c (0.3 L) dry white wine
2 lg red potatoes, cubed
1/2 lb (0.2 kg) rotini pasta
2 tsp (10 ml) balsamic or red wine vinegar
Directions:
Heat oven to 350°. Dredge meat in flour seasoned with salt, pepper. Heat oil in lg. pan until hot, brown beef. Remove beef. Add onions, cook 'til golden. Remove 1/2 onions. Add garlic, rosemary, parsley, bay, cinnamon, salt, pepper, allspice to onions. Stir well, add water, wine. Rtn meat to pan. Bake until almost tender, 1 1/2 hrs. Stir potatoes into meat. Return to oven, bake, covered until tender, 30 min. Meanwhile, cook pasta, drain. Discard parsley sprigs, bay leaves. Stir in onion, vinegar. Serve over pasta. 6 svgs.
