Ingredients: Metric Units
1 med onion, quartered
1 clove garlic
1 jalapeno, seeded, quartered
1/3 c low sodium soy sauce
1/4 c vinegar
2 Tbsp dark brown sugar
1/2 tsp ground black pepper
1/4 sp ground cloves
1/4 tsp ground ginger
1/4 tsp ground cinnamon
1/2 tsp dried thyme leaves
1 1/2 lb skinless, boneless chicken breasts, cut into 1" cubes
lime, lemon wedges
To prepare sauce, process onion, garlic, jalapeno, soy sauce, vinegar, brown sugar, pepper, cloves, ginger, cinnamon, thyme in food processor or blender until smooth. Place chicken pieces in one layer on 9" microwave safe pie plate. Pour sauce over chikcen and turn pieces to coat. Cover with wax paper and microwave on high until juices run clear when chicken pieces are pierced, 6-8 min, turning pieces over and rearranging after 4 min. Spoon over Spiced Rice, Garnish with lime wedges. 4 svgs.
