Santa Fe Chicken More Recipes Like This

American - Southwest Dinner recipes

Ingredients: Metric Units
2 Tbsp olive oil
6 chicken thighs
6 garlic cloves
1 14.5 oz can Mexican style stewed tomatoes
1 lg (8oz) yam, peeled, 1/2" dice
1 4oz can diced cilis
1/2 c low salt chicken broth
1/4 c bottled mild green taco sauce

1/2 c packed chopped fresh cilantro
1 15oz can golden hominy, drained
Heat olive oil in heavy large skillet over med. high. Season chicken with salt, pepper. Saute chicken until golden brown, 4min/side. Pour off all but 1 Tbsp. of oil. Add garlic, cook until just fragrant (30sec). Add stewed tomatoes, yam, chilis, broth, 6 Tbsp cilantro, taco sauce. Cover, reduce heat to med low, simmer until chicken is just tender, about 20min. Remove chicken. Add hominy to skillet, boil until yam is tender, juices reduced to sauce consistency, 10 min. Season salt, pepper. Return chicken to skillet to reheat. Cook until hot. Garnish w/cilantro.
