14 oz. can crushed tomatoes
1/2 med. onion, sliced
3 med. garlic cloves, crushed
15 oz. can black beans, rinsed, drained.
2 Tbsp. olive oil
1/4 lb. penne pasta (or other short pasta)
1 ripe med. mango, cubed
1/2 c. fresh basil leaves
salt & pepper to taste
Cook pasta. Heat tomatoes, onion and garlic and a med. nonstick skillet. Simmer 10 min. Add beans, oil. Cook another minute. Spoon sauce over top of cooked pasta, and add mangoes, basil and salt and pepper to taste. Toss and serve. 2 servings.
