Summer Salad with Orzo & Black Beans More Recipes Like This

Greek pasta recipes

Ingredients: Metric Units
1 c orzo
1 can (? oz) black beans
1/4 c sliced black olives
1/4 c extra virgin olive oil
1/4 c wine vinegar
1/2 tsp sesame oil
1/2 c diced celery
1/4 c golden raisins
1/2 c frozen peas
sprig oregano
sprig cilantro
Directions:
Cook orzo in plenty of boiling water, until al dente, about 10 min. Meanwhile, place frozen peas in colander, with fresh herbs. Drain orzo over peas. Mix, move to med. bowl. Add oil, vinegar, sesame oil, mix well. Add beans, olives, celery, raisins. Mix well. Serve at room temperature or chilled.
