Chinese Vegetable Salad
1 lb. shredded Napa cabbage
1 medium carrot, shredded
1 small cucumber, in strips
3 oz. snow pea pods, sliced diagonally
3 oz. fresh straw mushrooms
3 scallions, chopped
2 Tbsp. toasted sesame seeds
1 recipe Chinese Salad Dressing
1 head leaf lettuce
Combine cabbage, carrot, cucumber, snow peas, mushrooms and scallions. Sprinkle toasted sesame seeds over top.
Toss mixture lightly with Chinese Salad Dressing.
Serve salad in a bowl or on individual plates lined with lettuce leaves.
