Cucumber & Feta Cheese Salad
1 medium cucumber, peeled, halved, sliced 1/4" thick
1 sm. Vidalia/sweet onion, halved, sliced 1/4" thick
6 Greek black olives, pitted
2 oz. feta cheese, crumbled
3 Tbsp. olive oil
2 Tbsp. white wine vinegar
1/2 tsp. coarsely ground black pepper
salt to taste
Combine cucumber, onion, olives, cheese. Toss gently.
Stir together oil, vinegar, pepper, salt (to taste) in cup.
Pour dressing over cucumber mixure, set aside 10 minutes for flavors to blend.
