Bean and Sausage Soup More Recipes Like This


Ingredients: Metric Units
1/2 lb. dry small white or Great Northern or navy beans
5 c chicken broth
1/2 c chopped onion
1 tsp. salt
1/4 tsp. cumin
1/8 tsp. pepper
8 oz smoked sausage or hot dogs, diagonally sliced, 1/2" thick
8 3/4 oz. whole kernel corn, drained (or 10 oz. frozen corn)
1 c diced red potatoes
chopped parsley
Directions:
A hearty soup for a cold day.

Yield: 4-5 servings

Wash beans, soak in 3 c cold water overnight. (For "quick" soak, bring beans and 3 c water to a boil, boil for 3 minutes. Remove from heat, cover, and let stand 1 hour.) Drain and rinse beans.

Add broth, onion, seasonings. Cover, simmer 1 hour or until beans are tender.

Add sausage, corn, potatoes, simmer 30 minutes.

Garnish with parsley.
