Mama's Chicken Soup
4-lb. roasting chicken, in pieces
4 quarts cold water
1 large onion, split
6 ribs celery, in half
4 carrots, cleaned, sliced into thick coins
1 parsnip, sliced in half
1 Tbsp dill weed
salt, pepper to taste
1/2 c chopped parsley
Clean, wash chicken throughouly.
Cover with water, bring to boil.
Skim off until liquid is completely clear, adding additional water as it boils away.
When clear, add onion, celery, carrots, parsnip dill. Simmer, partly covered, until broth reduced to about 2 quarts, about 1 1/2 hrs.
Remove chicken, vegetables (except carrots). Remove meat from bones, return to broth. Season, simmer uncovered for 15 min.
Chicken soup, it's good for what ails you.
