Garbanzo and Garlic Soup More Recipes Like This

Ingredients: Metric Units
3 c canned garbanzo beans
13 c water
3 bay leaves
2 med yellow onions, chopped
5 cloves garlic, coarsely chopped
1 carrot, peeled and chopped
2 Tbsp dried parsley
1 Tbsp salt
1/2 c dry sherry or dry white wine
Black pepper to taste
Drain beans and cover with 12 c cold water. Bring to boil. Add bay leaves, onion, garlic, carrot and parsley and reduce heat to simmer. Cover and cook for 2 1/2 to 3 hours, stirring occasionally. When beans are soft, scoop out about half the beans with slotted spoon and puree in food processor. Return puree to pot. Soup should bee an even mixture of whole and pureed beans. Add remaining cup water if the soup is too thick. Season with salt, sherry and pepper. Simmer for 20 min before serving.
