Island Black Bean Soup More Recipes Like This

Island Soup recipes

Ingredients: Metric Units
1 meaty ham bone or hock
8 c. water or beef broth
2 c. onion, chopped
2 c. carrots, grated
2 c. celery, chopped
6 cloves garlic, minced
1/4 c. olive oil
1/4 c. dry sherry
2 1/4 c. black beans
1/4 c. parsley
spices: cayenne, rosemary, curry...
Directions:
In large pot, heat oil, saute vegetables and garlic. Add broth, beans, ham, spices. Bring to boil. Reduce, cover, simmer for 3 hrs, stirring frequently. Add water if becomes too thick. Remove ham from bone, stir into pot with sherry. Simmer 30 min. Salt and pepper to taste. Garnish with minced egg, sour cream. Makes over 1/2 gallon.
