Sauerkraut Soup More Recipes Like This


Ingredients: Metric Units
3 cans (46 oz) chicken broth
1 lg onion, chopped
1 c chopped celery
2 bay leaves
1 1/2 c sliced carrots
1 1/2 lb smoked sausage, diced
3 cans (15.5 oz ea) red kidney beans
1 1/2 tsp garlic, minced
1/2 c chopped fresh parsley
1/2 tsp black pepper
1 Tbsp sweet red paprika
1 Tbsp Worcestershire sauce
12 oz warm beer
2 lb sauerkraut, drained
1 c diced red bell pepper
3-4 med potatoes, peeled
Directions:
In pot, combine all ingredients save sauerkraut, bell pepper and potatoes. Bring to boil, reduce heat, simmer 45 min. Skim fat. Add sauerkraut, bell peppers and potatoes. Cook until potatoes are soft. Remove potatoes from pot, mash coarsely. Return to pot, cook 15 min longer, or until thick.
