1 lb. small red potatoes
1/4 c. olive oil
1/4 c. white wine vinegar
2 garlic cloves, minced
1 tsp. ground cumin
1 tsp. sweet paprika
1/4 tsp. dried red pepper flakes
2 scallions, including some of the green part, sliced thin
1/4 c. minced fresh parsely
Directions:
Give your potatoes a kick! Fun side dish for Jerk Chicken.
Yield: 4 servings
Combine unpeeled potatoes with enough cold water to cover by 1 inch, bring to boil, simmer 15–20 minutes, or until potatoes are just tender.
In a small bowl, whisk oil, vinegar, garlic, cumin, paprika, red pepper flakes until well combined.
Drain potatoes, pat dry, toss with dressing, scallions, parsley, salt and pepper.
