pastry for 9" pie
1 1/3 c brown sugar
1/4 tsp salt
3 Tbsp flour
2 Tbsp cornstarch
4 c green tomatoes, sliced
Juice of 1 large lemon (1/3 c)
grated rind of 1 lemon
3 Tbsp butter
Directions:
Preheat oven to 450°. Line 9" pan with pastry. Combine brown sugar, salt, flour, cornstarch. Dust sugar mixture lightly over pastry crust. Arrange sliced tomatoes in pastry, cover with remaining sugar mixture. Sprinkle lemon juice and grated rind over top, dot with butter. Fit top crust or woven pastry strips over filling. Bake 10 min. Reduce heat to 350° and bake 25 min.
