Ingredients: Metric Units
1 lb. sm. tender okra
2 sweet red peppers, seeded, diced
1/2 long red or green chili, seeded, minced
pinch salt
2 Tbsp olive oil
3/4 lb. ground beef
1 1/2 Tbsp garlic crushed
2 tsp ground coriander seeds
2 Tbsp. tomato paste
salt and pepper to taste
1 c. water
1 Tbsp fresh lemon juice
pinch sugar
Garnish:
fresh coriander sprigs, lemon slices, pita triangles
Directions:
Night before: wash okra, drain. Cut off top stem, cut pod into 3/4" lengths. Spread on towels, dry @ room temp. Red pepper paste: grind peppers, chili w/1/2 c. water, pinch salt. Cook HI, stirring oft, reduce to jamlike consist. Brown beef, stir in okra, garlic, coriander, ppr paste, tom. paste, salt, pepper. Cvr tightly, cook LO 20 min. 20 min. bef svg: stir in 1 c. H2O, lem juice, sugar. Reheat gently. Garnish. 4-6svgs
