1 head red curly leaf lettuce, in bite-sized pieces
1 c. arugula
1/2 med. red onion, thinly sliced
4-5 ripe plum tomatoes, in wedges
2 ripe peaches, pitted, sliced
2 carrots, peeled, diagonally coined
1/2 med. cucumber, thinly sliced
3/4 c. garlic croutons
Dressing
3/4 c. extra virgin olive oil
1/3 c. balsamic vinegar
4oz. feta cheese, crumbled
salt, pepper to taste
Directions:
In a large salad bowl, mix together vegetables (curly leaf lettuce, arugula, onion, tomatoes, carrots, cucumber) and peaches.
Drizzle with olive oil, toss. When ready to serve, drizzle with vinegar, toss with croutons and feta. Add salt, pepper.
