1 clove garlic
2 Tbsp Hoisin sauce
1/4 c dry sherry
2 Tbsp ketchup
8 oz skinless, boneless, chicken breasts
This Fox Family Recipe is an Uncle Fox favorite, baked chicken in a savory sauce. Serve it alongside rice or over noodles.
Yield: 2 servings
Turn on broiler, cover broiler pan with foil.
Mince garlic and combine with Hoisin sauce, sherry, ketchup in a baking dish large enough to hold chicken (no extra bowl to wash!).
Wash and dry the chicken and add to the marinade, turning it to coat each piece well.
Grill or broil chicken, turning once or twice and basting with marinade, until chicken is cooked through, about 10 min.
There should be no pink showing at the center of the chicken. Take care to not overcook. Slice diagonally, serve.
