1.5-2 lbs boneless chicken thighs
1-2 packets Good Season's Garlic and Herb dressing
1 can stewed tomatoes
1 bunch scallions, chopped
1 package sliced mushrooms
1-2 tsp tarragon
1 1/4 cup Sauterne (vermouth is a good substitute)
1/4 cup flour
3-4 Tbsp butter
1-2 Tbsp oil
salt and pepper to taste

Heat oil in deep skillet. Coat chicken in dry dressing mix and brown in skillet.
Remove chicken to covered baking dish.
Melt butter in skillet
Saute scallions in melted butter.
Add mushrooms. Stir to coat in butter and cook until softened.
Add flour and stir until thickened.
Add tomatoes, Sauterne (or vermouth), tarragon, salt and pepper.
Cook until thickened.
Pour over chicken in baking dish.
Can be refrigerated up to 24 hours before baking.
Bake at 350 degrees F for about 45 minutes. Let sit for about 5 minutes. Serve over rice or noodles.
