2 c. cooked rice
1 1/3 c. milk
1/8 tsp. salt (a dash)
1/2 c. brown sugar
1 Tbsp. softened butter
1 tsp. vanilla
3 eggs
1 very ripe banana, mashed
1 tsp. cinnamon
1/2 c. raisins
1/2 c. graham cracker crumbs (or cookie crumbs)
Directions:
A sweet way to use that leftover rice from "Chinese Night."
Preheat oven to 325°F.
In medium sized bowl, combine rice, milk, salt, sugar, butter, vanilla, eggs, banana (optional - use it if ya got it), cinnamon, and raisins.
Break up any clumps of rice, make sure rice is coated with milk mixture. Spray a 2 qt. (2L) baking dish with nonstick spray. Spread graham cracker crumbs in the bottom of the bowl.
Gently pour rice - milk mixture into baking dish. Bake at 325 degrees F for 50 minutes, or until golden brown and set.
