Dim Sum Pork Strips

Ingredients:
2 lb. pork tenderloin or boneless center cut pork 1 1/2 Tbsp. soy sauce 2 1/2 Tbsp. hoisin sauce 1 Tbsp. dry sherry 1/8 tsp. Chinese Five-Spice Powder 1 Tbsp. honey
Directions:
Make marinade: Combine soy sauce, hoisin sauce, sherry, five-spice, and honey in a large ziplock bag. Add the meat. Marinate overnight in the refrigerator. Cooking: Preheat oven to 300 degrees F. Set meat on a rack over a pan of water. If none of your racks fit inside your baking pans, set it on top of an upside down muffin tin. The idea is to have the meat over the water, but not in it. Roast 1 hour. Baste with additional hoisin sauce or soy sauce. Turn meat after an hour. Roast another hour. Slice thinly, and serve with bread - or cut into cubes and serve with toothpicks.
