1 c. butter
3/4 c. sugar
3 egg yolks
1/2 tsp. nutmeg
1 tsp. vanilla
2 3/4 c. flour

Cream butter, sugar. Add yolks, vanilla. Add flour gradually. Put dough into cookie press. Bake cookies 5 to 8 minutes at 350 degrees F, until tops are no longer shiny and bottoms are just starting to brown.
Tips for using a cookie press:
Do not use baking parchment. That's right, no parchment, which is a big deal coming from me - I hate washing up cookie trays.
Don't grease the tray, worry not, they won't stick.
Trays should be cool and dry.
Set the press down right on the tray. Start the press and continue to add dough until you see the edges of the cookie just start to spread out the edge, then lift.
And know that some won't turn out. Set aside any flubs for reloading or for jam thumbprints (roll dough into a ball, make a thumbprint, add a tiny spoonful of jam to the center).
