Spinach Supreme


Ingredients:
4 boxes frozen chopped spinach 2 Tbsp. chopped onions 2 c. sour cream 1 c. tomato sauce 1 c. sliced mushrooms 2 c. grated sharp cheddar cheese 1/4 c. dried breadcrumbs 1 Tbsp. butter
Directions:
Brown breadcrumbs in butter in a skillet, over low heat. Cook and season spinach with salt and pepper to taste. Drain very well. Stir in onions, tomato sauce, and sour cream. Add cheese and mushrooms. Put in a 1 1/2 quart (medium) casserole dish. Top with breadcrumbs. Bake at 350 F, 15 - 20 min.
