2 boxes of frozen broccoli
1 can condensed cream of mushroom soup
1 cup shredded cheese
1 cup mayonnaise
1 Tbsp. minced onion
2 beaten eggs
wisp of vinegar
salt and pepper to taste
Directions:
A "flashback recipe" for broccoli. Feeling retro? In 1950s and 60s American cooking, that can of cream of mushroom soup was ubiquitous, inescapable. My mom felt incredibly cutting edge when she realized any other Campbell's condensed cream soup could substitute - like cream of asparagus or cream of celery or even...cream of chicken. She's such a rebel. A Grant family recipe.
Cook broccoli according to package directions, drain.
Mix with remaining ingredients and pour into a shallow baking dish. Bake at 300 F for 20-30 minutes, or until set.
Option: Try it with spinach instead of broccoli.
