Swedish Oven Pancake

Ingredients:
1/2 lb. bacon 6 eggs 1 tsp. salt 3 c. milk 2 c. flour
Directions:
Snip bacon into bite-sized pieces and spread in 9x13 pan or the bottom half of a broiler pan. Place in 375 F degree oven until bacon is slightly crispy but not dried out. While bacon is baking, beat eggs until frothy. Add salt, milk. Very gradually, add flour. Remove bacon pan from oven. Gently pour egg mixture over bacon. Return to oven for 30 min. Pancake will puff up. Serve immediately, while still puffed up. Garnish with... lingonberry jam sour cream and brown sugar maple syrup For the American palate, this dish seems to fit best for breakfast or brunch, but if you've been haunting the Ikea and are looking for the too-legit-to-quit Swedish thing, serve it as an evening meal.
