1 cup granulated sugar
2 tsp. baking powder
2 tsp. cinnamon
2 cups finely chopped almonds
2 eggs
1 cup dark brown or light brown sugar
2.5 cups all purpose flour
1/3 cup vegetable oil
Directions:
Perfect with a cup of strong coffee. Why can't your favorite coffeehouse be at your house?You will need: a mixer. The batter is too stiff to beat by hand.
Yield: 4 doz. biscotti
In a large bowl, combine sugar, baking powder, flour, cinnamon and chopped almonds. Add beaten eggs and oil. Mix thoroughly in a stand mixer (don't even try doing this with a hand mixer or a spoon!) until well blended.
Separate dough into four pieces. Using one piece at a time, roll out onto floured counter to about 1/2 inch thickness. Fold into thirds to form a "loaf."
Place loaf onto lightly greased cookie sheet at least six inches apart. Bake at 350 degrees for 20-30 minutes.
Remove from heat. Brush with beaten egg while still warm. Cool slightly and slice on an angle. Each loaf yields about one dozen biscotti.
