Old House Potato Pudding

PA Dutch Side recipes

Ingredients:
6 – 8 large potatoes 1 large onion 3 eggs 1 c. milk 6 Tbsp. butter, melted 1 1/2 tsp. salt Freshly ground pepper to taste
Directions:
Peel and grate potatoes and onion, combine. Add eggs, well beaten. Heat milk (one minute in the microwave should do it), and add to potato mixture. Add melted butter. Season with salt and freshly ground pepper to taste. Pour mixture into a well greased shallow baking pan. Bake at 350 F (a moderate oven) for 1 hour 15 min. From Ginny’s archive.
