1/4 c butter (1/2 stick), softened
1/2 c brown sugar
1/3 c molasses
2 1/2 c flour
1 tsp baking soda
1/4 tsp baking powder
2 tsp ginger
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1 tsp vanilla
2 Tbsp water
2 Tbsp milk
things for decorating before baking: sprinkles, raisins, red hots, chocolate chips
frosting for decorating after baking: 1/4 c icing sugar plus enough water to make a paste
Sift together dry ingredients: flour, baking soda, baking powder, ginger, cinnamon, nutmeg, salt.
In mixing bowl, cream butter and sugar. Add molasses. Add flour, then milk and vanilla. Add water one spoonful at a time, adding just enough so that dough comes together. (After you add the flour, it's very dry and in little crumbles. As you add the liquid, the little crumbles start to come together into dough.)
Wrap dough tightly in two layers of plastic wrap and chill two hours or overnight.
On a floured board, roll out chilled dough, to about 1/4 inch thick. Use cookie cutters to cut out gingerbread people...or stars or bells or snowmen or whatever cutters you have. Decorate before baking with candies, red hots, raisins, sprinkles, etc. You can add details with frosting after baking.
Bake cookies at 350 degrees F for about five minutes.
