20-oz. can pineapple chunks in juice, drained
1/3 cup barbecue sauce
1 pound boneless, skinless chicken breasts, cubed, or jumbo shrimp, peeled and deveined
1 red or green pepper, cut into large cubes
1 small to med. zucchini, sliced
Something a little different for grillin' night. Cubes of red pepper makes it really pop. And the whole deal comes in at under $6. Delicious with sides of coleslaw and rice.
Yield: 4 servings (for under $6!)
Drain the pineapple but reserve 2 Tbsp. juice.
In a small bowl, stir together the juice and the barbecue sauce. Set it aside.
Thread the pineapple chunks, chicken (or shrimp if you're gettin' fancy!), pepper and zucchini onto skewers. Brush with the barbecue sauce.
Grill or broil 10 to 15 minutes or until chicken is no longer pink, turning and brushing occasionally with the barbecue sauce.
Discard any remaining barbecue sauce!
