Barbecue Kabobs More Recipes Like This

Budget Dinner Recipes
Ingredients: Metric Units
one 20-oz. can pineapple chunks in juice, drained (approx. $1.29)
1/3 cup barbecue sauce
1 pound boneless, skinless chicken breasts, cubed (approx. $2.39), or jumbo shrimp, peeled and deveined
1 red or green (I prefer red) pepper, cut into large cubes (approx. $0.79)
1 small to med. zucchini, sliced (approx. $0.79)
Directions:
Drain the pineapple but reserve 2 Tbsp. juice.
Stir together the juice and the barbecue sauce in a small bowl. Set it aside.
Thread the pineapple chunks, chicken (or shrimp!), pepper and zucchini onto skewers. Brush with the barbecue sauce.
Grill or broil 10 to 15 minutes or until chicken is no longer pink, turning and brushing occasionally with the barbecue sauce. Discard any remaining barbecue sauce!

Serve with cooked rice or coleslaw for a nice meal. Serves four at approximately $5 or $6 (I'm bad at math). Enjoy! -Diana
