2 Tbsp. (30 ml) butter or margarine
2 Tbsp. (30 ml) flour
1/4 tsp. (1 ml) salt
1/2 tsp. (2.5 ml) prepared mustard
1 cup (0.2 L) milk
1/4 pound (0.1 kg) procesed American cheese, grated
1/4 tsp. (1 ml) Tabasco sauce
8 eggs
Directions:
Looking for something a little different for "breakfast for dinner" night? Or a fun brunch dish.
You will need: 4 ramekins or small dishes that can go in the oven.
Yield: 4 servings
Preheat oven to 350°F. Butter 4 ramekins and set aside.
Melt butter; blend in flour. Stir in salt and mustard. Add milk and cook, stirring constantly, until mixture thickens and comes to a boil.
Remove from heat; add grated cheese, stirring occasionally until cheese is melted. Pour 2 Tbsp. (30 ml) of sauce into each of the 4 individual buttered baking dishes. Break 2 eggs into each dish and top with remaining sauce.
Bake in a 350° F oven until eggs are set, about 12 minutes.
