A basic baked breaded chicken recipe, great for a weekday evening.
I use boneless chicken breasts, but any piece will do, just adjust cooking time accordingly. Bone-in chicken will need more time.
Preheat oven to 350° F. Spray a 9 x 13 inch baking pan lightly with nonstick spray.
Rinse chicken under cold water; set aside.
Pour the milk into a medium bowl.
In a second bowl place the breadcrumbs. Grind the minced onion with a mortar and pestle and mix it into the bread crumbs. Blend garlic powder into the bread crumbs.
Dunk each piece of chicken in the milk, then dredge it through bread crumb mix, then place in the 9 x 13 pan.
Bake at 350° F for 30-35 minutes or until chicken is no longer pink.
Serve with mashed potatoes and pan gravy
. Plan on using stock you have on hand; boneless chicken breasts won't produce a lot of pan drippings. And know what? It's still a home-cooked meal if you use gravy from a jar too.
