6 pieces of chicken (I use boneless breasts, but any piece will do; just adjust cooking time accordingly)
1 cup of milk
1.5 - 2 cups Italian seasoned bread crumbs
1/2 tsp. instant minced onion
1/2 tsp. garlic powder
Directions:
Preheat oven to 350 degrees F. Spray a 9 x 13 inch baking pan lightly with nonstick spray.
Rinse chicken under cold water; set aside.
Pour the milk into a medium bowl.
In a second bowl place the breadcrumbs. Grind the minced oninon with a mortar and pestle and stir it into the bread crumbs. Blend garlic powder into the bread crumbs.
Dunk each piece of chicken in the milk, then dredge it through bread crumb mix, then place in the 9 x 13 pan. Bake at 350 degrees F for 30-35 minutes or until chicken is no longer pink. Serve with gravy (either from a jar or make your own from stock you have on hand, but this recipe doesn't produce a lot of pan drippings). Enjoy! -Diana
