1/2 lb ground turkey
1 sm. can shrimp (same size as tuna can)
1 c fresh spinach, chopped, blanched
2 Tbsp bamboo shoots, chopped
1 1/2 Tbsp soy sauce
1 Tbsp oyster sauce
1 tsp cornstarch
1/2 tsp sugar
1 Tbsp sesame oil
Won Ton Wrappers
In boiling water, blanch spinach 1 minute. (You'll end up with a gloppy mass about the size of a fist). Drain, combine with all other filling ingredients. Let stand.
Cut wrappers into circles. Put a scant teaspoonfull in center of the wrapper, in a log shape. Wet edges with water (just dip your fingers into a bowl of cold water and fingerpaint). Fold in half, pleat, seal.
TO STEAM: Use nonstick spray on plate, place stuffed dumplings on plate. Place plate in bamboo steamer. Do not let dumplings touch each other or they'll gummily stick together.
