4 slices thickly sliced smoked and cured turkey bacon
1/2 Tbsp olive oil
1 medium sweet onion
1 1/2 c. mushrooms
2 Tbsp peanut butter
2 Tbsp coconut milk
1/2 tsp soy sauce
1/2 tsp sugar
1 clove garlic
1 tsp lemon juice
1 pizza crust
1 c mozzarella cheese
Directions:
Heat a large skillet over medium heat. Add bacon and cook 3-4 minutes per side. Remove from skillet and let cool. Chop coarsely.
Slice onion into rings. Slice mushrooms.
Add olive oil to skillet. Increase heat to medium high. Add onion and sauté until brown and soft, about 10 minutes. Add mushrooms, cook 5 more minutes. Remove from heat, set aside.
In a saucepan, combine peanut butter, coconut milk, soy sauce, sugar, garlic and lemon juice. Cook over low heat until peanut butter melts and sauce melts together.
Spread peanut sauce over pizza crust. Top with onions-mushrooms, bacon. Sprinkle with cheese.
Bake, either in a pizza pan or on a stone at 425 degrees F 20 minutes, until cheese is brown and bubbly.
