Strawberry Bread More Recipes Like This


Ingredients: Metric Units
1 1/2 c. fresh strawberries, about 1 dry pint
1 c sugar, divided
1 1/2 c flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
2 eggs
1/2 tsp vanilla extract
1/2 c vegetable oil
Directions:
Rinse, core and slice strawberries into a small bowl. Toss sliced strawberries with 1/2 c sugar.

In another bowl, sift together flour, baking powder, baking soda, salt, cinnamon, and remaining 1/2 c. sugar.

In a third bowl, beat eggs until foamy, then add vanilla extract and vegetable oil. Add dry ingredients gradually. Fold in strawberries.

Spray a loaf pan with nonstick spray. Pour batter into pan.

Bake at 350 degrees F for 1 hour, or until a toothpick comes out clean. Let cool in pan 20 minutes, turn out of pan and cool on rack completely.
