1 1/2 c yellow cornmeal
1/2 c flour
2 Tbsp baking powder
1/2 tsp salt
1/4 tsp freshly ground pepper
2 c milk
1/2 c butter, melted
4 c frozen whole kernel corn
1 4-oz. can chopped green chilis, drained
1/2 c. roasted red peppers, coarsely chopped
In a mixing bowl, combine cornmeal, flour, baking powder, salt, and pepper.
In a separate bowl, beat eggs in large bowl. Add milk and melted butter. Beat.
Add cornmeal mixture to milk mixture and stir until just combined.
Fold in corn, chilis and peppers.
Heat a griddle over high heat. Pour 1/4 cupfuls of batter onto skillet, cook both sides until golden brown.
