Garlic Meatball Skillet

1 lb ground beef 1/4 c seasoned bread crumbs 1/4 c parmesan cheese 1 egg 1/2 tsp salt 1/2 tsp pepper 1/2 tsp garlic powder 1 14.5-oz. can diced tomatoes 2 Tbsp beef broth 3 cloves garlic, minced 2 Tbsp sour cream

Combine ground beef with bread crumbs, parmesan cheese, egg, salt, pepper, and garlic powder. Form beef mixture into small meatballs about 1 inch (2.5 cm) in diameter. Heat a large skillet over medium high heat. Add meatballs to skillet. Shake pan occasionally to keep meatballs round and to brown all sides. When meatballs are browned, add tomatoes, broth, and garlic and bring to a boil. Reduce heat to simmer. Simmer 10 minutes or until meatballs are cooked through. Just prior to serving, stir in sour cream. Serve with noodles. (You can make this into a true "skillet dinner" and stir cooked noodles in at the end... Or stir in raw noodles and some extra broth and cover while it simmers. But my kids won't touch a skillet dinner unless I can produce a Hamburger Helper box. Sigh. Tough room.)
