2 lb. skinless, boneless chicken breasts
2 Tbsp. lemon juice, divided
salt and pepper to taste
1 c. feta cheese crumbles
1/4 c. diced red pepper
1/4 c. fresh parsley, chopped
Directions:
Preheat oven to 350°F.
Spray a 9x13 baking dish with nonstick spray. Lay chicken in baking dish.
Sprinkle chicken with 1 Tbsp. lemon juice. Season to taste with salt, pepper. Top with feta cheese crumbles. Drizzle the remaining 1 Tbsp. of lemon juice over the top of the feta cheese.
Bake at 350°F for 35-40 minutes or until chicken is done through. Garnish with red pepper and parsley.
