German Salad recipes

Ingredients: Metric Units
5 lbs. potatoes
1/4 cup finely chopped bacon
1/4 cup chopped onion
1 Tbsp. flour
2 tsp. salt
1.25 Tbsp. sugar
1/4 tsp. pepper
2/3 cup cider vinegar
1/3 cup water
1/2 tsp. celery seed
3 Tbsp. chopped parsley
Cook the potatoes "in their jackets" until tender. Cool. Peel and slice thinly.

Fry the bacon until crisp. Add the chopped onion and cook 1 minute. Blend in flour, which has been sfited with sugar, salt and pepper. Stir in the vinegar and water. Cook 10 minutes, stirring well.

Pour this over the sliced potatoes and add the celery seed and chopped parsley. Toss, and serve warm. Serves 6-8. Enjoy! -Diana
