I whole broiler/fryer chicken, or some cut up chicken parts, or skinless breasts, or whatever chicken you have
1 or 2 ribs of celery, cut thickly
2 small onions or shallots, peeled and cut in half
3 garlic cloves, peeled and cut into thin slices
2 large carrots, scrubbed and cut thickly
1 sprig of fresh rosemary or 1 tsp. of dried
1 tsp. dried oregano
A can of whole stewed tomatoes (or not)
A piece of bacon or ham (or not)
Directions:
Preheat the oven to 350 degrees. Spray a 9 x 13 - inch baking pan with nonstick spray. Lay the chicken in the pan, then arrange the veggies (including garlic) and the tomatoes around it. Sprinkle with the herbs. Then, lay the piece of bacon or ham on top of the chicken (like you would a meatloaf). Bake for about 40 minutes or until chicken is no longer pink and juices run clear. Serves a few people, depending on the amount of chicken. Enjoy! -Diana
