1 envelope granular gelatin
1/2 c. sugar
1 c. water
2 8-oz. packages cream cheese
1 tsp. vanilla extract
1 9-inch graham cracker crust
Directions:
In a small bowl, combine gelatin granules (1 Tbsp., or one packet) with sugar.
Heat water to boiling. Add to gelatin-sugar mixture. Stir until gelatin granules dissolve, about 3 minutes. (It will look like discolored water that you'd be leery about drinking. That's okay.)
In a large bowl, beat cream cheese until smooth. Add vanilla extract. Beat to combine.
Slowly, add gelatin mixture to cream cheese mixture.
When mixture is smooth, pour into graham cracker crust.
Refrigerate until firm, three hours or overnight.
