Yiddish Dessert recipes
2 c. soft coconut macaroon cookie crumbs
3 Tbsp. margarine, melted
4 8-oz. packages cream cheese, softened
1 c. plus 1 tsp. sugar
2 Tbsp. orange zest
Preheat oven to 325°F.
Lightly grease springform pan, or spray with nonstick spray.
Combine cookie crumbs with melted margarine. Press firmly onto bottom and one inch up the side of the pan. Bake 12 minutes.
In a large bowl, beat cream cheese with 1 c. sugar until smooth. Add orange zest.
Add eggs, one at a time. After each egg, beat until smooth.
Pour into crust.
Bake 55 minutes or until set (not jiggly when you jostle the pan). Cool before removing side of pan.
Refrigerate 4 hours or overnight.
Serve with sliced strawberries. L'chaim!
