1 head Leaf lettuce or one unit of Romaine lettuce
One fresh European cucumber, wax removed and sliced
Two vine tomatoes, sliced into 6 wedges
1 can or jar of black olives, sliced
1/2 pound small fresh mozzarella cheese balls, drained
one 8 oz. package asiago or pepper jack cheese, sliced into thin triangles
1 jar artichoke hearts, drained
One 16 oz. bottle Italian Dressing
Antipasto makes a dramatic presentation for the first course. A salade compose, use just the ingredients you like.
Yield: 4 servings
Wash fresh veggies. Tear lettuce and place in a wood or ceramic bowl. Next, arrange cucumber and tomato slices. Then arrange artichoke hearts, asiago and mozzarella cheeses. Next, arrange black olives. Shake the Italian dressing bottle and drizzle half of it over the salad.
Serve, passing the remaining dressing at the table.
